The Hometown Explorer: The Story Behind Mexi-Pho

Mexi-Pho was founded by two friends with a vision of combining their favorite dishes from each culture. They wanted to create something that didn't exist yet, something that would offer a unique dining experience for their customers. After creating the concept, logo, and menu items, they opened their first restaurant in Glastonbury, CT in November 2016.

The Menu

At Mexi-Pho, you'll find a mix of Mexican and Vietnamese dishes that are sure to delight your taste buds. One of the standout items on the menu is the queso with house-made chips. The queso is creamy and flavorful, and the chips are crispy and fresh.

My son ordered the Phorrito, which is a flour tortilla filled with the classic ingredients (like rice, beans, a protein, guac and queso), but also has a variety of pho ingredient options (like bean sprouts and cabbage). The Phorrito is a unique twist on the classic burrito, and the combination of flavors is delicious.

I ended up ordered the Pho, which is a traditional Vietnamese soup with chicken, rice noodles, and vegetables in a savory broth. The chicken was tender and juicy, and the broth was flavorful without being too heavy. You can check out their full menu.
