Please tell us a little bit about your business and some of the things that you brought with you. Well, I was a chef for 46 years and a Pit Master for over 20, and I love playing with chilis, hence my nickname. I started this business as a micro hobby back in 2008, and it's grown and grown. I've started a second brand called Plain Dave's; that's my real name. There's no heat in that, so I got something for everybody. I started with a couple of hot sauces just from stuff I grew at home and expanded. I've always got something in the works, so I got into barbecues and rubs and the spicy jams. I'm working on ketchup, other hot sauces, you know, a couple more barbecue sauces with no heat. It's always a work in progress. I love the research and development. I call it playing; companies call it research and development. Currently looking for a storefront somewhere in the Norwalk area just to get the brand out there, help other brands, other local purveyors, and vendors bringing their products in. I need a larger manufacturing facility because my demand is too much for me now. As you can see, I'm running out of space. It's an eight-foot table; I've got to start getting two booths. It's a great problem to have. It's something I love. I got out of hospitality when COVID hit and never looked back. This is the love of what I do. I love to play. So, I have to ask, what is your favorite thing on the table? I'm currently sold out of it; it's my Jamaican Scotch bonnet hot sauce. It is my biggest seller; it's my go-to sauce. I actually get them from a Jamaican grower in Tallahassee, but I do have more in stock. So if anybody's looking for it, I got it.
