Becky from The Hometown Explorer at the Sun Winding Food Fest 2024, here with Mike from Ergo Chef. Mike, can you tell us a little about your business and how you got started? Mike: Absolutely. Ergo Chef was started by my brother in 2002. We actually started our business after my brother, who was a chef, developed carpal tunnel and tendonitis. He couldn't cut very well, so the doctor said he had to either have surgery or design a knife. We went to my dad's machine shop and designed a blade. The blade was similar to this chef knife, but the angle helps keep your hand resting firm in a more natural position. When you're rocking and chopping through your food, it's very easy and comfortable, and there's very little strain. The importance of that is just a healthier wrist and arm, and it was great for a lot of chefs, cooks, and even home folks who have issues with their wrists or don't want to have issues. From the design that we came up with, which was originally our Pro Series—this is our newer Pro Series—we went to the Crimson series, the red one, and then we even worked with celebrities like Guy Fieri. This is the eight-inch chef knife that we created for him; it has some ergonomics to it, the balance, a really unique faux Bowie tip, and then high carbon steel. It comes in a three-piece set. We have a bunch of different options laid out on the table here at the fest, but it's a great event. We enjoy coming here every year, and the crowd seems to love us. We also do items like a really cool tool from Myron Mixon, the world's winning man in barbecue. We designed this with a little pig hook, a bottle opener, and the blade to cut stuff. You need a bottle opener when you're barbecuing, right? And then a rib skinner, if you make ribs, to get the flavor in the ribs. It's really popular. Becky: That's awesome! Are there any other specialties that you guys make, as far as specific knives? Mike: Yes, we make a lot of different knives. The bread knife is unique; it's got our offset patented angle but also the blade is very offset so that keeps your knuckles off the board. With the wide serrations, it allows you to cut without a lot of crumbs. It makes it very easy and quick work to slice up your bread. You can find us online at ergochef.com, and we're on Amazon.
